Everyone wants an invite to dinner with this Chicken Stroganoff, a few simple ‘secret’ ingredients make this Stroganoff stand apart from the rest.
Very quick to make, I often make this when time is short, or guests pop in unannounced, 30 minutes from start to finish, or maybe even a little less!
Chicken Strognaoff
Chicken Stroganoff, a family favourite!
Ingredients
- I small onion, finely diced
- 1 clove garlic, finely chopped
- 2 medium sized chicken breasts, cut into small strips
- 12 mushrooms, sliced
- 50g butter
- 30ml brandy
- 100ml white wine
- 100/150ml chicken stock
- 150ml double cream
- 50ml soured cream
- 1 tspn paprika
- 1 1/2 tablespoons of dijon mustard
- (Optional) Tablespoon of corn starch, mixed with a little water
- Salt and pepper to taste
- Rice to serve
Instructions
- Using the butter, fry the onions and garlic gently in a large heavy frying pan until softened
- Add the brandy and bubble for a few minutes
- Add the wine and simmer until reduced by half
- Next add the chicken stock and simmer for a few minutes
- Add the cream, the mustard and the paprika and stir.
- In a separate pan cook the mushrooms in the remaining butter until soft
- Add mushrooms to the creamy mix
- In the mushroom pan, add the chicken strips and partially fry off over a high heat
- Add to the creamy mushroom mix
- Add the soured cream and stir through until combined
- If cream sauce is too runny add a little cornstarch mixed with water
- Cook for a further 3 minutes, or until chicken is cooked through
- Season with salt and pepper to taste
- Serve with rice
