You need comfort food right? Well this recipe for Hungarian Beef Goulash delivers it all, carbs, warmth and a deliciously velvety sauce that screams at you to mix it with rice. . . in fact everyone that has eaten this always comes back for more sauce, so I tend to make it extra saucy!
I used to have this on my specials board at my restaurant and it used to fly out, the delicious tender beef melts in the mouth, whilst the peppery undertones of the paprika are perfect to warm you from the inside on a cold Winters night. . . . in fact, I think I might make this for dinner tonight.
Simple, one pot (or even crockpot) the washing up is minimal too, always a bonus!
A hearty and warming dish from Hungary, comfort food at it's best.
Ingredients
- 800g stewing steak
- 140g tomato puree
- 400ml of a full bodied red wine
- 400ml beef stock (I use beef oxo cubes)
- 100ml sunflower oil
- 100g plain flour
- 50g paprika
- 5g chilli powder (optional)
- 500g baby potatoes (optional)
- 2 medium peppers, sliced
- 4 large carrots, julienned (very thin batons)
- 3 bay leaves
- salt and pepper to taste
- Basmati Rice (to serve)
Instructions
- Prepare the beef into approximately 2cm, fat and sinew free pieces
- In a large heave bottomed pan, heat the sunflower oil and add the beef, cook until beef has changed colour
- Reduce heat, add flour and stir
- Add tomato puree and paprika (and optional chilli powder), stir
- Add wine 1/2 at a time and stir until sauce becomes uniform, but thick
- Add stock 1/2 at a time, until sauce is a little runnier than you would want
- Add bay leaves
- Reduce heat to the lowest simmer possible, you want to achieve what I call, slow bubbles and cook for approximately 1 1/2 hours, stirring occasionally, but thoroughly.
- Add peppers and carrot and cook for a further 30 minutes
- Lastly add the potatoes (if you are using) and cook until soft
- Add salt and pepper to taste
Notes
Add more water if required during cooking to ensure sauce is the consistency you want. The dish is ready when the meat is tender and the potatoes are cooked through.
