Salmon is a very versatile fish and my recipe for Salmon Fillet with Rosti Crust brings the flavour of the salmon to life. A subtle hint of dill in the crisp rosti is a contrast the the Salmons creaminess, whilst the Mustard, Soy and Honey sauce will leave you wanting to lick the plate. . . . literally!
I prefer my Salmon a little pink in the middle, but it’s doesn’t dry out with this recipe if you cook it all the way through.
I got a 9 out of 10 from the dinner guests with this. . . . a 9 only because they wanted more of it on the plate (2 steaks next time then!)
As a variation, this dish also goes superbly well with the champagne sauce form my Scallops in Champagne Sauce recipe.

Salmon Fillet with Rosti Crust, a hint of Dill makes this rather special
Ingredients
- 4 fillets of Salmon
- 4 medium potatoes, grated and squeezed in a clean cloth to remove excess moisture
- 1 onion finely sliced
- 1 teaspoon Salt
- 1 teaspoon dried Dill
- 1/2 teaspoon cracked black pepper
- 2 tablespoons plain flour
- 1 egg, lightly beaten
- 40g Butter or coconut oil for frying
- 8 tablespoons Soy Sauce
- 4 tablespoons Wholegrain mustard
- 8 tablespoons runny Honey
Instructions
- Put the grated potato, onion, salt, pepper and dill into a mixing bowl and combine.
- Sprinkle flour over the top and stir in.
- Add the egg and combine, the mixture should be fairly stiff, not runny.
- Take each Salmon piece and generously add a layer of the rosti mix to the top side (ideally 1-1.5cm thick)
- Heat the butter in a heavy bottomed frying pan and place salmon, rosti side down and cook on a low to medium heat until Salmon is cooked half way through (it turns light pink), this should take approx 5 minutes, but may be a little longer if your steak is thicker.
- Carefully, turn salmon over with a fish slice and continue cooking until cooked through (approx 3 minutes)
- Meanwhile, combine the soy, honey and mustard in a pan and heat until bubbling.
- To serve, drizzle the sauce over the rosti encrusted Salmon
