The beauty of this Summer Vegetable Bake, is not only is it delicious, but it’s healthy and so simple to make!
You can mix and match the vegetables that you use for this dish. In the picture that you see, I use aubergine, courgette (zucchini), potato and tomato. But you could easily use Sweet potato, carrot, butternut squash, spinach or leeks but to name a few. A definite – ‘day after a roast dinner dish’, where you have a little bit of each of a few vegetables in the fridge.
My daughter has requested that I make this time and time again and she loved it, saying she doesn’t want anything with it, just a big bake all to herself! Of course, it is substantial enough to serve as a main dish, or even as a side dish to perhaps a BBQ.
I sneaked cheese in there as I tend to do at any given opportunity!! I used grated Mozzarella, but it could be really special with a blue cheese such as a creamy Gorgonzola. So as you can see, experimenting is the key, this is how cookery should be, not set to staunch guidelines. Summer Vegetable Bake
Ingredients
- 1 Courgette (Zucchini)
- 1 Aubergine
- 1 large potato
- 2/3 medium tomatoes
- 1 large onion (finely chopped)
- 2 garlic cloves (finely chopped)
- 2 tablespoons olive oil
- 2 generous handfuls of grated Mozzarella
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions
- Gently fry chopped onions and the garlic in the olive oil until softened.
- Slice Aubergine and lay on a plate, sprinkle with table salt and leave for 20 minutes to 'push out' all the slightly bitter juices. Discard juice.
- Slice the rest of the vegetables using either a mandolin or a knife.
- Alternating the vegetables, assemble in a deep baking dish (end on, like untoppled dominoes)
- Season with salt, pepper and thyme
- Spread the onion and garlic mix evenly over the top
- Bake in the oven at 190C or equivalent for 30-40 minutes until all vegetables are softened.
- Generously top with the Mozarella, or other cheese of you choice and return to the oven for a further 15 minutes until cheese is bubbling and golden.
