This absolutely delicious Thai Inspired Chicken dish was somewhat of an experiment. I had an idea what I wanted to achieve, but I was so pleased with the result I had to share!
The flavour combination is undeniably peanutty (is that even a word?!) but the coconut sweetens a little with the heat of the ginger and chilli to finish. A very fresh flavour and perfect for a BBQ where you want something just a little different, but super SUPER simple.
The smell whilst it is cooking is to die for, your neighbours will be knocking the door down!
This dish can be prepared in advance, so great if you have lots of people coming over, I favour anything that only takes a few minutes on the BBQ when catering for large numbers.
This marinade would also work well with prawns, leave to marinade raw for an hour or so, pop prawns on a skewer and BBQ for a few minutes until cooked through.
So here it is, enjoy and feel free to tweak, I promise I won’t be offended!
Thai Inspired Chicken
Ingredients
- 1 chicken, segmented into 8 pieces (2 legs, 2 thighs, 4 breast pieces)
- Salt and pepper to taste
- 100ml Chicken stock
- 75g peanut butter
- 50ml coconut milk
- 2 tablespoons Apple Cider vinegar
- 3 tablespoons soy sauce
- 1 Clove garlic chopped
- 1 teaspoon chilli flakes
- 1-2 teaspoon of Sriracha sauce (depending if you like heat or not)
- 2 teaspoon ginger powder
Instructions
- Combine all the marinade ingredients together with a whisk
- Place chicken in a baking dish
- Thoroughly season with salt and pepper
- Pour marinade over chicken and chill for at least 1 hour
- Put chicken in the oven 180C or equivalent for 30 minutes, turning half way through and spooning marinade onto chicken
- Remove from oven and finish for approx 5 minutes on the BBQ until it has gained colour.
- If cooking from cold, allow another few minutes on the BBQ to heat right through.
- Alternatively grill under a conventional grill until chicken turns golden.

I suppose that tahini could be substituted for peanut butter for those of us allergic to it. I do the same with Hummus.
